I’ve had this little recipe book since (according to the date on the top) 2004. Up until a few weeks ago, I never made anything from it, but always kept it around because so many of the recipes look so delicious! Finally I made these Toffee Chocolate Cookies that just melt in your mouth and keep you wanting more. (Which can also be a very bad thing!) I would highly recommend them as I’ve made them now for the second time and am in love.
Ingredients
1 Cup softened butter 3/4 Cup brown sugar 1/2 Cup white sugar 1 Egg 2 tsps Vanilla | 1) Preheat oven to 375. Line cookie sheet with parchment paper. Beat butter, sugars, egg and vanilla until creamy. |
1 3/4 Cup flour 1 Cup rolled oats 1 tsp Baking Soda 1/4 tsp salt | 2) Combine flour, oats, baking soda and salt. Add to butter mixture beating until blended. |
1/2 package skor toffee bits 1 Cup milk chocolate chips | 3) Stir in toffee bits and chocolate chips. Drop dough in tablespoonfuls onto cookie sheet. |
Bake for 8 –12 minutes depending on your oven, until light golden.
Cool for 5 minutes on sheet, then transfer to a rake to cool.
*note* You can add or replace milk chocolate chips with white chocolate chips as well as adding 3/4 cup of slivered almonds if you’d like a nutty flavour.
